SAUERKRAUT SALAD 
1 can sauerkraut (Bavarian is good also), drained and rinsed and rinsed
1 chopped onion
1/2 jar pimentos, diced
1 green pepper, chopped
2 stalks celery, diced fine
2 green onions, diced fine

Sprinkle top with last three ingredients and cover tightly in a large glass salad bowl so that layers may be seen. Be sure that it is well covered with plastic wrap and well refrigerated.

Serves 12.
