SPINACH LORRAINE 
5 boxes frozen spinach
3 c. Cheddar cheese
Approx. 1 c. Parmesan cheese
Cayenne pepper to taste

Boil 5 boxes of frozen chopped spinach. Drain very well. Place spinach in 13x9 pan. Add 3 cups shredded Cheddar cheese and mix well. Add 2 tablespoons cayenne pepper (more or less to taste). Mix well. Mix 1/2 cup Parmesan cheese in, then shake Parmesan to cover top. Bake 350 degrees for 35 minutes or until cheese on top is melted.
