VERMICELLI WITH SCALLOPS &
SHRIMP
 
1 lb. vermicelli
1/2 lb. sea scallops
1/2 lb. shrimp
4 green onions, chopped
6 nice size mushrooms, sliced
2 cloves garlic, finely chopped
2 tomatoes, chopped
Olive oil
Basil
Pepper
Parsley

In a large pan pour in enough olive oil to cover bottom of pan. Saute sea scallops and shrimp for a couple of minutes. Add green onions, mushrooms, garlic, a sprinkle of basil, pepper and parsley. Do not over saute shrimp and scallops or they will become chewy. Add tomatoes last and saute for about a minute. Boil water for vermicelli. Use a pinch of salt and a teaspoon of olive oil so vermicelli does not stick. When water is boiling rapidly, drop vermicelli in and follow directions of package. Pour mixture over vermicelli. This recipe can be made with just scallops, just shrimp or a combination of both. Serves 4.
