HOT BEEF 
25 or 30 lbs. ground beef
1 c. celery and leaves
3 lg. onions
2 c. chopped green pepper
1 lg. can tomato juice
1 (18 oz.) bottle catsup
1 (18 oz.) bottle barbecue sauce
1 lb. long grain rice
3 tbsp. salt
1 tbsp. pepper

Mix above ingredients well in 2 roasting pans. Put in oven and cook at 325 degrees for 45 minutes. Take out of oven and stir. Lower heat to 300 degrees and cook for 3 to 4 hours more, stirring every half hour. Average 8 sandwiches per pound of beef. Large quantity - approximately 200 sandwiches.
