ALMOND CHICKEN SALAD 
1 can (20 oz.) crushed pineapple
1 can (11 oz.) mandarin orange segments
2 c. diced, cooked chicken
1/2 c. mayonnaise
1/2 c. sliced celery
1/4 c. toasted, slivered almonds
2 tbsp. minced green onions
1/4 tsp. salt
Crisp lettuce leaves

Drain pineapple very well. Drain oranges. Combine remaining ingredients, except lettuce leaves. Fold in pineapple and oranges. Lay lettuce leaves on salad plate and spoon salad serving on top. Serves 4.
