SHEPHERDS PIE 
6 c. fresh mashed potatoes
2 c. chopped cooked beef
2 tbsp. vegetable oil
1 lg. onion, chopped
2 cloves garlic, crushed
3 lg. eggs
2 tbsp. chopped parsley
1 tsp. freshly ground black pepper
1 tsp. poultry seasoning
1/2 tsp. salt
2 tsp. melted butter

Heavily butter 10 inch pie plate. Spoon 2 1/2 cups mashed potatoes into pie plate. Layer in meat. Set aside.

In hot oil cook onions and garlic until tender. Mix onion mixture with eggs, parsley, pepper, poultry seasoning and salt; pour over meat. Cover with remaining potatoes and brush on butter. Bake at 400 degrees for 30 minutes until top is lightly golden. Let stand for 10 minutes before serving. Makes 6 servings.
