BUSY - DAY SHEPHERD'S PIE 
1 lb. ground beef
1 med. onion, diced
1 1/2 c. water
3 tbsp. flour
1 (10 oz.) pkg. frozen mixed vegetables
1 beef-flavored bouillon cube

Cook ground beef and onion until meat is browned and onion is tender. Drain grease and sprinkle flour over beef. Pour in water and stir until mixture begins to thicken. Mix in vegetables, bouillon cube, salt, and pepper. Heat to boiling. Reduce heat to low; cover and simmer until vegetables are tender, stirring occasionally.

Meanwhile, prepare instant potatoes as label directs for four servings. Spoon mounds of potatoes on top of beef and vegetable mixture. Tear cheese slices into strips and top each mound of potatoes with cheese. Ready to serve when cheese is melted.
