JUG PICKLES
pickling salt
1 gal. cucumbers, sliced and put in gallon jar
alum water (2 tbsp. alum to 1/2 gal. water)
1 qt. white vinegar
8 c. sugar
1/2 box pickling spice (tie spice in a small white cloth)

Boil 1/2 gallon water and 1 cup pickling salt. Pour over cucumbers in jug. Pack cucumbers down well in jug. Let set for 7 days. Eighth day: Wash cucumbers and cover with boiling water. Ninth day: Wash cucumbers and cover with alum water (2 tablespoons of alum to 1/2 gallon of water. Boil this and pour over cucumbers in jug.). Let set for 24 hours. Tenth day: Drain and wash cucumbers with cold water. Put back in jug. Mix vinegar, sugar and pickling spice. Boil this mixture and pour over pickles in jug. Every day for 4 days, boil this mixture and pour back over cucumbers in jug. On the fourth day of boiling this, put cucumbers and liquid in smaller jars and seal or you can seal them up in the jug if you want to. Just put the liquid in a large pan to boil and then put the cucumbers in the pan long enough for them to get hot before putting back in the jug to seal.
