MOCHA CHEESE CAKE 
2 c. whipping cream
1/3 c. coffee flavored liqueur
2 c. semi-sweet chocolate morsels
1/3 c. butter, softened
2 tbsp. vanilla extract
2 pkg. cream cheese, softened

Melt chocolate in a double boiler or microwave. In a small mixing bowl, beat cream at a very high speed until soft peaks form; set aside.

In a large mixing bowl, beat butter and cream cheese until smooth and creamy. Add coffee flavored liqueur, vanilla and melted chocolate. Fold whipped cream into chocolate mixture at a low speed. Pour into prepared crust. Chill 8 hours.

Chocolate Cookie Crust:

1 1/2 c. chocolate cookies, finely crumbled
1/4 c. butter, melted
1/2 tsp. cinnamon

Put all ingredients into small mixing bowl. Mix thoroughly. Pat mixture into bottom and sides of a 9-inch pie pan. Chill and bake at 350°F. Cool before filling.

Since microwave ovens vary in power, you may need to adjust your cooking time.
