CRISP CINNAMON COOKIES 
3 c. flour
1 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1/2 c. shortening
2 c. brown sugar
2 eggs
1 tsp. vanilla
1 c. rolled oats
1/2 c. white sugar
4 tbsp. cinnamon

Sift together first 4 dry ingredients. Cream shortenings and brown sugar. Blend in eggs and vanilla. Stir in dry ingredients and then add oats. Chill dough for 1 hour for easier handling.

Divide dough in 3 parts. Shape into a 2 inch "hot dog". Wrap in wax paper and put in refrigerator until firm. Then slice "hot dog" into 1/4 inch round circles. Mix white sugar and cinnamon together in small bowl. Dip each cookie slice in sugar/cinnamon mixture coating each side of slice. Bake at 375 until lightly brown. Makes 9 dozen cookies!
