CHEDDAR CHEESE PIE 
1 (9") baked pie shell
3 c. shredded Cheddar
1 tbsp. finely chopped onion
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. Worcestershire sauce
3 eggs
6 med. tomatoes
Salt & pepper
Grated Parmesan

Heat Cheddar cheese, onion, salt, mustard and Worcestershire over low heat, stirring constantly until cheese is melted; remove from heat. Beat eggs in large bowl until foamy; beat in cheese mixture gradually. Pour into pie shell. Cook uncovered at 325 degrees just until set, about 25 minutes. Cut tomatoes into thin slices. Overlap slices around edge of pie to form a wreath; sprinkle with salt and pepper and Parmesan cheese. Cook uncovered 15 minutes longer. Serves 6.
