PECAN PRALINES | |
2 c. sugar 1 tsp. baking soda 1 c. buttermilk 1/8 tsp. salt 2 tsp. butter 1 tbsp. light corn syrup 2 1/2 c. pecan halves Combine first 4 ingredients in heavy saucepan. Cook over medium heat to 210 degrees (about 5 minutes), stir constantly. Add last 3 minutes. Cook until 234 degrees (about 5 more minutes). Stir constantly. Remove from heat, beat with wooden spoon 2-3 minutes just until it starts to thicken. Working rapidly drop teaspoonfuls onto lightly buttered wax paper. Let cool. Wrap in wax paper and store in airtight container. |
