MEDITERRANEAN PIZZA 
Pizza dough for 1 large pizza
1/2 c. Romano cheese
1 c. crumbled feta cheese
1 1/2 c. shredded Mozzarella
1/2 c. shredded Jack cheese
1 pkg. frozen spinach
1 med. onion
2 lg. cloves garlic
2/3 c. pine nuts
1/3 c. sliced black olives
Olive oil
Black pepper
Basil

Prepare pizza dough (your own or prepared from the store). Put in pan, greased and sprinkled with corn meal. Thoroughly drain spinach; squeeze out excess water. Saute in large pan sliced onion, chopped garlic. Toast pine nuts to light brown and add to onion mix. Add spinach; cook lightly. Season with basil and pepper.

Remove from heat; cool. Mix Feta, Mozzarella and Jack cheeses together and spread on top of pizza dough. Liberally sprinkle with olive oil and Romano cheese. Bake at 375-400 degrees until golden brown.
