RED PEPPERS ROASTED 
4 lg. red sweet peppers (whole)
2 tbsp. olive oil
1 onion, sliced

Bake whole pepper in oven or microwave oven. Cool. Remove core and seeds and skin. Place in large fry pan. Add more olive oil. Add:

5-6 basil leaves, chopped
Salt & pepper
2 tbsp. balsamic vinegar

Cook a few minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
