PORK ROAST WITH GARLIC AND
CRACKED PEPPER
 
3 to 4 lb. pork roast (boneless)
1 1/2 tsp. garlic powder
1 tsp. salt
peppercorns (ground)
2 c. water

Rub garlic, salt and pepper on roast and put roast in small roasting pan with cover for 1/2 hour. Add water and bake 3 to 4 hours at 325°F (baste every hour) until roast is tender. Slice; the broth makes a great gravy. (I also do this in my crock-pot for 8 to 10 hours on low.) I also do round roast beef this way without garlic.
