SPICY WHITE CAKE WITH HOT FRUIT SALAD | |
1/2 c. shortening 3/4 tsp. salt 1/2 tsp. grated lemon rind 1/4 tsp. mace 1 1/2 c. sugar 3 tsp. baking powder 2 3/4 c. sifted flour 1/2 c. milk 1/2 c. water 4 egg whits, stiffly beaten Blend shortening, salt, lemon rind, and mace. Add sugar gradually and cream well. Add baking powder to flour and sift 3 times. Add flour to creamed mixture, alternately with combined milk and water, mixing after each additional until smooth. Fold in egg whites. Pour batter into two 9-inch layer pans greased with pan; coat and bake in moderate 350 degree oven for 25 to 30 minutes. This cake may also be baked in greased ring mold filled 2/3 full, with extra batter used for cupcakes. Bake ring 30-40 minutes in moderate 350 degree oven. Unmold and fill with heated fruit salad. Top, if desired, with molasses cream. |
