KEY LIME PIE 
2 eggs
1/2 c. lime juice
1/4 tsp. salt
Chocolate cookie crumb shell
1/3 c. sugar
1 to 2 tbsp. grated lime rind
1 can Eagle Brand milk
1 tsp. grated lime rind
Green food color
1/2 pt. sour cream
1/8 tsp. salt

Beat eggs slightly. Add milk, lime juice, 1 tablespoon lime rind, and 1/4 teaspoon salt. Beat 2 minutes at medium speed. Tint with food color (go easy on the color). Pour into shell. Bake at 350 degrees for 10 minutes.

Mix sour cream, sugar, and 1/8 teaspoon salt. Pour into baked pie. Turn oven temperature to 425 degrees. Return pie to oven for 5 minutes to set cream. Sprinkle remaining rind around edge of pie. Cool. Can be frozen.
