CARAMEL PIE 
1 (9 inch) baked pie crust
3 egg yolks
1/2 c. sugar
1 c. milk
1 tbsp. butter
2 tbsp. flour
1/2 c. browned white sugar

Mix sugar, flour, egg yolks, butter and milk. Start cooking over low heat. Add browned white sugar. Add 1 teaspoon vanilla. Cook until thick. Pour in baked pie shell. Top with meringue and brown slowly at 400 degrees.

Meringue For One Pie
3 egg whites
1/2 tsp. cream of tartar
5 level tbsp. sugar
1 tsp. sugar

Beat egg white and cream of tartar until stiff. Add sugar and vanilla. Beat until glossy. Spread over pies. Brown slowly at 400 degrees.
