SOPAPILLAS 
3 c. flour
2 tsp. baking powder
1 tsp. salt
3 tbsp. shortening or butter
3 eggs
1/4 c. sugar
1/3 c. (approx.) water
Oil for deep fat frying

Mix flour, baking powder and salt in a bowl. Cut in shortening working into coarse pieces.

Beat eggs and sugar and part of water. Add to dry mixture and knead on a floured board, adding more of water to mixture if needed for a workable smooth, elastic, dough. Make small round balls and let stand for about 15 minutes covering with a dish towel. Heat oil. Roll out balls like a tortilla and deep fry. Drain on paper towels. Serve with any of the below toppings.

1. Hot refried beans, topped with cheese, lettuce, tomatoes and salsa on top of that.

2. Boil 2 cinnamon sticks in 1 cup water for about 30 minutes. Take the cinnamon sticks out of the water and add 3 cups brown sugar; simmer until syrupy. Serve on top of sopapillas with a spoon.

3. Mix 1/2 cup sugar with 1 teaspoon cinnamon and sprinkle on top.

4. Plain powdered sugar; sprinkled on top.

5. Plain honey drizzled on top.
