APPLE PASTRY SQUARES 
PASTRY:

2 c. flour
1/2 tsp. salt
2/3 c. shortening
2 egg yolks
1 tbsp. lemon juice
1/2 c. cold water

FILLING:

1/2 c. brown sugar
2 tbsp. cornstarch
1 c. water
1 tbsp. lemon juice
4 c. apples, peeled and thinly sliced

GLAZE:

1 c. confectioners' sugar
1/2 tsp. vanilla
2 tbsp. butter
2 tbsp. milk

FOR PASTRY: Combine salt and flour, cut in shortening with pastry blender until crumbly. Blend in egg yolks with lemon juice and water. Divide in half, setting one part aside. Roll pastry out to fit bottom and halfway up sides of 9x13 inch pan.

FOR FILLING: Combine first 4 ingredients listed in pan until smooth. Add apples. Heat to a rolling boil, stirring constantly and lower heat. Simmer 5 minutes, stirring occasionally. Spread layer of apples on top of pastry. Sprinkle with cinnamon and nutmeg, if desired. Roll out remaining pastry to fit top of pan. Fold down sides and seal. Cut slashes in top to release steam while baking. Bake at 400 degrees for 30-40 minutes.

FOR GLAZE: Combine all ingredients, beating until smooth. Drizzle over warm pastry. Slice into 12 large or 24 small squares. Tastes better than apple pie!
