SWEET POTATO SOUFFLE | |
3 med. sweet potatoes 1/2 c. half and half 1/2 c. firmly packed brown sugar 2 tbsp. butter 1/4 tsp. salt 1/2 tsp. ground nutmeg 1/2 tsp. cinnamon 3 egg whites 1 tsp. baking powder Cook sweet potatoes in boiling water until tender. Let cool, peel and mash. Combine potatoes and next 6 ingredients mixing well. Set aside. Beat egg whites until foamy. Add baking powder; beat until stiff. Gently fold into sweet potatoes. Spoon into a greased baking dish. Bake at 325 degrees for 45 minutes. |
