GRANDMA ESTHER'S CHEESE CAKE 
Make 1 day before serving. Use spring-form pan.

GRAHAM CRACKER CRUST:

1 1/2 c. graham cracker crumbs
2 tbsp. sugar
2 tbsp. melted butter
Pinch of salt

Grease spring-form pan. Mix together ingredients; press down into bottom of spring-form pan.

FILLING:

1 lb. cream cheese
1 c. sugar
3 eggs
2 tsp. vanilla
1 1/2 pts. sour cream

Cream together cream cheese and sugar; add eggs and vanilla. FOLD IN sour cream.

Bake at 325 degrees for 30 minutes. Turn off oven; let stand 1 hour with oven door closed.

This is a terrific recipe - smooth, creamy texture. It's our family's favorite.
