CREAMY GREEN ENCHILADAS 
1 lb. ground beef or turkey
1 lb. Velveeta cheese
1 can chopped green chiles
1 can whole tomatoes, chopped
Milk
2 dozen corn tortillas

Brown and season ground beef, or turkey, with garlic salt, pepper, onion, or desired seasoning. Soften tortillas in hot oil. Roll tortillas with drained meat and place in a 9x13 inch dish. Keep warm. Pour warm sauce over top and serve.

SAUCE:

Melt Velveeta with a small amount of milk over low heat, stirring constantly. Add 1 can chopped green chiles and 1 can drained, chopped tomatoes. Add more milk, if needed, for desired consistency.
