TOASTED COCONUT PIE 
3/4 c. sugar
3/4 c. light corn syrup
3 eggs, beaten
1/8 tsp. salt
1 tsp. vanilla extract
2 c. flaked coconut, toasted
1 unbaked 9" pastry shell

Combine first 5 ingredients; stir in coconut. Pour mixture into pastry shell. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake 30 minutes, shielding pie with aluminum foil the last 10 minutes. Yield 1 (9 inch) pie.
