GREAT COTTAGE CHEESE SPINACH
SALAD
 
1 pkg. lemon Jello
1 c. hot water
1/2 c. cold water
1 1/2 tbsp. vinegar
1/2 c. mayonnaise
1/4 tsp. salt
1/8 tsp. pepper
1 c. chopped raw spinach
3/4 c. cottage cheese
1/3 c. diced celery
1 tbsp. chopped onion

Dissolve Jello in hot water, add cold water, vinegar, mayonnaise, salt, and pepper. Blend well. Chill until thick and whip until fluffy. Fold in spinach, cottage cheese, celery, and onion. Pour into mold and chill until firm. Serves 4 to 6.
