MEXICAN LASAGNA | |
1 lb. ground meat turkey or beef 2 tbsp. taco season mix 1/2 c. chopped onion 1 1/2 c. tomato sauce 1 (16 oz.) can mild Picante sauce 1 c. cottage cheese 3 eggs 6 corn tortillas, torn or cut into 1 inch wide strips 6 oz. Monterey Jack cheese 4 oz. cheddar cheese or Mozzarella cheese Simmer first 5 ingredients 10 minutes. Combine cottage cheese and eggs. Spray Pam on 9 x 13 pan. Spread, 1/2 meat mix; 1/2 tortilla; 1/2 cup cheese and eggs; 1/2 cup Monterey Jack. Repeat layers. Top with Mozzarella cheese or cheddar cheese. Bake at 350 degrees for 20 to 25 minutes. |
