LUCY'S CARROT CAKE 
1/3 c. boiling water
2 1/4 c. shredded carrots
2 c. flour
1 1/4 c. sugar
3 eggs
3/4 c. vegetable oil
1 1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1 tsp. vanilla
1 c. chopped nuts

Heat oven to 350 degrees. Grease and flour cake pan(s). Pour water over carrots and let stand 2 minutes. Then mix all other ingredients and bake for 35-40 minutes. Cool, then frost.

CREAM CHEESE FROSTING:

1 (4 oz.) pkg. cream cheese
1/4 c. butter
1 tsp. vanilla
2 c. sifted powdered sugar
1-2 tsp. milk to taste
