SWEET POTATO CASSEROLE | |
3 c. mashed, cooked sweet potatoes 1 c. sugar 1 stick butter, melted 3 eggs, well beaten 1 tsp. vanilla 1/3 c. milk TOPPING: 1/2 c. firmly packed brown sugar 1/4 c. flour 2 1/2 tbsp. butter, melted 1/2 c. pecans or walnuts Combine all ingredients except topping ingredients and mix well. Spoon into a 2-quart casserole dish. Combine and mix topping ingredients. Cover casserole with topping and bake at 350 degrees for approximately 1 hour. NOTE: May wish to cut back on sugar. |
