SWEDISH RICE PUDDING 
1 c. rice
2 c. water
4 c. milk
1/2 tsp. salt
3 tbsp. sugar
1/4 c. butter, melted
4 eggs
1 tsp. vanilla
Sprinkle of nutmeg
1 almond, optional
3/4 c. raisins, optional

Add rice to 2 cups boiling water until most of the water is absorbed. Add milk, one cup at a time, allowing milk to absorb between additions and stir frequently. When milk is almost totally absorbed, remove from stove (rice must be moist.)

Mix together salt, sugar, butter, eggs and vanilla and stir into rice mixture. Add raisins now, if desired. Put into a baking dish. Sprinkle with nutmeg and stick in almond. Broil until light brown crust forms.
