SWEDISH RICE PUDDING 
1 qt. milk
1/2 c. rice
1 cinnamon stick
1/2 c. sugar
1 tsp. salt
3 whole eggs, beaten
1 c. milk
Raisins (optional)

Cook milk, rice and cinnamon stick together in double boiler for one hour, stirring occasionally. After 1/2 hour add salt and sugar and continue cooking. Remove from stove after one hour and remove cinnamon stick. Add beaten eggs and 1 cup milk. Pour into 2 quart casserole and place in pan of hot water in oven. Bake at 350 degrees for 35 to 45 minutes. Stir twice during first 20 minutes of baking to keep rice from settling on bottom. After stirring the last time stir in raisins and sprinkle with cinnamon.
