MAMAW'S OATMEAL CAKE 
1 1/4 c. boiling water
1 c. quick cooking oats
1/2 c. butter
1 c. brown sugar
2 eggs
1 1/3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla

In boiling water, add oats. Let stand 20 minutes, then add butter and sugars. Mix with this the eggs, vanilla, flour, soda, cinnamon and salt.

Bake at 350°F for 25 minutes.

Topping:

1 c. brown sugar
1 c. coconut
1/2 c. cream
4 tbsp. butter

Mix and boil until it bubbles. Pour over cake while it is still hot. Place back in oven and let topping start to bubble on top.
