SCALLOPED SWEET POTATO AND APPLE
CASSEROLE
 
3 med. sweet potatoes, boil until tender
1/2 c. butter
3/4 c. dark brown sugar, packed
1/2 c. apple juice and cider
1/4 tsp. salt
1/2 tsp. mace
1 lg. apple, thinly sliced

Melt butter in skillet; add sugar, cider, mace, and salt. Bring to boil; simmer 10 minutes. In 2 quart casserole, alternate potatoes and apple slices around edge and fill in middle. Cover with 1/2 syrup and bake at 400 degrees, covered, with foil 25 minutes. Remove foil and baste with remaining syrup. Cook 20 minutes, uncovered.
