APPLE PIE 
5 c. apples, peeled and sliced
2/3 c. sugar plus some for top
2 tbsp. flour
1/2 tsp. cinnamon
dash of salt
1/2 tsp. grated lemon peel
2 tsp. lemon juice
pastry for 2 crust 9-inch pie
2 tbsp. butter

Mix apples with 2/3 cup sugar, flour, cinnamon, salt, lemon peel and juice; set aside. Line 9-inch pan with 1 pastry circle. Fill with apple mixture. Dot with butter. Cover with top crust and crimp edges. Prick top with fork.

Bake in preheated oven at 375°F for 50 minutes or until apples are tender. Sprinkle crust with sugar before or after baking, if desired.
