SAFFRON RICE (MOROCCO) 
3 tbsp. butter or vegetable oil
1 med. yellow onion, chopped
1 green bell pepper, chopped
1 c. long grain rice
1/2 tsp. salt
Dash of pepper
1/4 tsp. saffron or turmeric

Heat oil in a large, heavy skillet or pot. Stir in butter, onion, pepper and rice. Fry over moderate heat, stirring frequently, until rice becomes golden, about 15 minutes. Add spices and 2 cups water, and bring to a boil. Then reduce heat, cover, and simmer about 20 minutes until liquid is absorbed.
