JENN'S SPANISH RICE 
Makes a great main course!

1 1/2 lb. ground beef or turkey
1 bell pepper
1 onion
2 tbsp. olive oil
1 tsp. Mrs. Dash seasoning (or comparable substitute)
5 sprigs fresh saffron
1 (10 oz.) jar pitted green olives (with no pimentos)
1 (15 oz.) can pink beans (or whatever your favorite is)
3 cups uncooked rice (healthy brown rice works great)
salt, to taste
hot sauce (optional)

Sauté pepper and onion in oil, add meat. Brown and drain fat. Add Mrs. Dash, saffron, olives, and beans. Cook on low for 15 minutes, add small amount of water if it looks dry.

Meanwhile, cook rice according to package directions minus 2 minutes.

Add rice to mixture and continue cooking for about 10 minutes on low, stirring constantly.

Salt to taste and serve adding hot sauce if you're looking for a kick.
