BAKED MASHED POTATOES 
2 1/2 lb. red potatoes, peeled and cut up
2 medium onions, chopped
1/2 c. water
1/4 c. olive oil
1 tsp. salt
1 tsp. sage
1/2 tsp. pepper
1/3 c. buttermilk or sour cream

Grease casserole dish. Add potatoes and onions. Mix together water, oil, salt, sage and pepper. Drizzle over potatoes. Stir together.

Bake, uncovered, at 450°F until tender. Mash or beat together with mixer, adding the buttermilk.
