CAJUN RICE | |
2 lbs. lean ground meat 1/2 lb. pure pork sausage 2 med. onions, chopped fine 1 1/2 green bell peppers, chopped fine 1/2 red bell pepper, chopped fine 3 stalks celery, chopped fine 2 tbsp. minced parsley 1 1/2 c. long grain rice Cook rice according to directions; set aside when cooked. In large heavy skillet, put ground meat and sausage, salt and pepper. Cook; stirring often until all the water is cooked out and meat begins to fry. Put meat in colander to drain all grease. While meat drains, put onions, bell peppers, celery, parsley and a little salt and pepper in skillet and cook until wilted. Do not over cook seasoning. When seasoning is done, transfer meat to skillet and mix with onion mixture. Then mix in cooked rice. Let stand at least one hour before serving. Keep warm. |
