OATMEAL SCONES 
1 c. baking oatmeal
1/2 c. butter plus 2 tbsp., softened
1/2 tsp. baking soda
1/2 c. brown sugar
1/2 c. sour cream

Thoroughly mix oatmeal, flour, butter, soda and brown sugar. Add sour cream; mix until dough forms. Press with hand into long strip on ungreased baking sheet, 2 inches wide by 1 inch thick. Make 2 deep ridges with back of knife lengthwise. Cut into 2 1/2 to 3 inch lengths and bake in 375 degree oven for 20 minutes. During last 5 minutes of baking separate 3 inch sections with spatula. Makes 4-5 scones. Recipe doubles or triples easily.
