MOLASSES NUT BREAD | |
1 egg 1/2 c. molasses 1/3 c. sugar 3 tbsp. butter 1 1/2 tsp. lemon rind 1 tbsp. lemon juice 2 c. flour 3/4 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2/3 c. buttermilk 1/2 c. chopped pecans Combine first 6 ingredients in large bowl, beat well. Combine dry ingredients. Add to egg mixture alternating with buttermilk beginning and ending with flour mixture. Mix well. Stir in pecans. Spoon batter into greased and floured loaf pan. Bake at 350 degrees for 50 to 55 minutes. Cool in pans for 10 minutes. Remove from loaf pan and let cool completely. Yields 1 loaf. |
