CARROT CAKE 
CAKE:

2 c. sugar
1 1/2 c. oil
3 eggs
2 1/4 c. flour
2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots
1 1/2 c. English muffins

FROSTING:

8 oz. cream cheese
2 c. powdered sugar
1 tsp. vanilla
1/2 c. butter

Mix together the sugar, oil and eggs. Add all other ingredients and bake at 300 degrees for 1 hour in a 9 x 13-inch cake pan.
