FAVORITE LEMON CUTOUT HOLIDAY
COOKIES
 
2 1/2 cups all-purpose flour
1 cup granulated sugar
1 cup (2 sticks) butter, softened
1 egg
1 tsp. baking powder
1 tbsp. lemon juice
2 to 3 tbsp. lemon extract
2 tbsp. vanilla

In a large mixer bowl, combine all ingredients. Beat at low speed, scraping bowl often, until well mixed, 1 to 2 minutes.

Note: If desired, divide dough and color with food coloring (mix in well).

Wrap dough in waxed paper, Saran or plastic wrap. Refrigerate until firm, 2 to 3 hours.

Preheat oven to 400°F. Roll out dough, 1/3 at a time, on a well-floured surface to 1/4-inch thickness. Cut out with cookie cutters (hearts for Valentine's Day, animal shapes for any day, Christmas shapes, etc.).

Place 1-inch apart on ungreased cookie sheets. If desired, sprinkle colored sugars over tops or bake and decorate later with frosting.

Bake at 400°F for 6 to 10 minutes, or until edges are lightly browned. Remove immediately; cool completely.
