PORK CHOPS WITH ORANGE RICE 
6 pork chops 3/4 thick
Salt and pepper
2/3 c. uncooked rice
3/4 tsp. salt
1 tsp. sugar
1/4 c. raisins
1 tbsp. grated orange rind
1 1/2 c. boiling water
2/3 c. orange juice
6 1/2 slices orange
3 tbsp. brown sugar

Brown chops well; drain off fat. Season with salt and pepper. Mix rice, 3/4 teaspoon salt, sugar, raisins and grated rind in 3 quart casserole. Pour on boiling water and orange juice. Cover casserole and place in 350 degree oven for 10 minutes. Remove from oven stir rice, lay chops on top of rice. Top each chop with a half slice of orange and a 1/2 teaspoon brown sugar cover. Bake in 350 degree oven 45 minutes to 1 hour or until chops are tender. Serves 6.
