MAPLE - WALNUT PIE 
1 (9 inch) pie crust, unbaked
2/3 c. real maple syrup
1/4 c. butter, melted
1/2 tsp. vanilla
2 c. walnuts, chopped
Pinch of salt
Dash of nutmeg
Dash of cinnamon
3 eggs
A few squirts of fresh lemon juice

Beat ingredients except walnuts in blender or with electric mixer until mixture is light and smooth. Spread walnuts into bottom of unbaked crust. Pour batter over nuts. Bake 30 minutes or until solid. Serve warm or cold with whipped cream or ice cream. Serves 6 to 8.
