MARINATED VEGETABLES 
1/4 c. lemon juice
1/4 c. salad oil
1 envelope French salad dressing mix
1/2 c. water
1 c. raw carrot sticks
1 c. raw zucchini sticks
1 c. raw cauliflower florets or broccoli
Lettuce leaves and cottage cheese

Combine lemon juice, oil, salad dressing mix and water in a saucepan; add vegetables. Bring to a boil, reduce heat and simmer uncovered for 4 minutes. Cool slightly, cover and chill about 3 hours. Drain and serve on lettuce leaves with cottage cheese as a salad or alone on lettuce leaves as an appetizer nibble.

Note: Vegetables may be stored in refrigerator up to 3 weeks. Make ahead for holidays.
