PRUNE OATMEAL CAKE 
1 c. oatmeal
1 1/2 c. boiling water
1/2 c. shortening
2 c. sugar
2 eggs
1 1/2 c. flour (self-rising)
1 tsp. baking soda
1 tsp. cinnamon
1 c. buttermilk
1 c. cooked, chopped prunes

Pour boiling water over oatmeal, let stand until dissolved (if using regular oatmeal, let stand 20 minutes). Cream shortening and sugar in bowl, add eggs and mix; add dry ingredients alternately with milk; add prunes. Bake in oblong pan or two square pans at 350 degrees for about 50 minutes or until done. Cake will spring back when touched with the finger.

GLAZE:

1 c. sugar
1/2 c. buttermilk
1/2 tsp. baking soda
1 tbsp. white corn syrup
1/4 c. butter
1/2 tsp. vanilla

Mix all ingredients. Bring to a boil and pour over prune cake.
