ENGLISH TOFFEE SQUARES | |
2 c. all-purpose flour 1 c. packed light brown sugar 1/2 c. butter 1 c. pecan halves Toffee Topping (see below) 1 c. chocolate chips Heat oven to 350 degrees. In large mixer bowl combine flour, brown sugar, and butter. Mix until fine crumbs form. (A few large crumbs may remain.) Press into ungreased rectangular pan, 13 x 9 x 2 inches. Sprinkle with pecan halves. Set aside. Prepare Toffee Topping. Drizzle evenly over pecans and crust in pan. Bake 20 minutes or until topping is bubbly and golden. Remove from oven. Immediately sprinkle with chocolate chips; press gently into surface. Cool completely. Cut into bars. About 3 dozen bars. TOFFEE TOPPING: In small saucepan combine 2/3 cup butter and 1/3 cup packed light brown sugar. Stir constantly over medium heat until boiling. Boil and stir 30 seconds. Remove from heat. Use immediately. |
