GOLDEN CORN BREAD 
1 1/2 c. coarse cornmeal
1 tsp. salt
1 tsp. baking soda
2 tbsp. bacon fat, melted
1 tbsp. sugar
2 c. buttermilk
1 egg
1 c. shredded sharp cheddar cheese

Into large bowl sift cornmeal, salt, soda and sugar. Add buttermilk and egg; blend well. Add melted fat to batter; mix well. Blend in cheese and pour batter into an 8" or 9" square pan. (I use a 10" cast iron skillet instead.) Bake at 450 degrees for 20 to 25 minutes until brown. If using a glass baking dish, bake at 425 degrees.
