LAYERED BEEF - ZUCCHINI
CASSEROLE
 
1 lb. ground beef, lean
1 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
2 - 2 1/2 lb. zucchini
1 bell pepper, chopped
2 tbsp. Parmesan cheese
1/2 c. chopped onion
1 c. sharp cheddar cheese
2 eggs
2 c. cottage cheese
1 tbsp. parsley

Cook beef, salt, pepper and garlic until meat is done. Drain. Spoon into 2 quart baking dish. Slice zucchini and cook in salted water until tender; drain. Mash zucchini and drain again. Stir in onion and bell pepper. Spread over meat mixture and sprinkle with cheddar cheese. Beat eggs until light; fold in cottage cheese and parsley. Spoon over zucchini layer; sprinkle with Parmesan cheese. Bake at 350 degrees for 40 to 45 minutes. Serves 6 to 8.
