NO-BAKE RICE PUDDING 
1 qt. milk
3/4 c. sugar
3/4 c. rice
1/4 tsp. salt
1 egg
1 c. milk

Put first 4 ingredients in large saucepan. Bring to a boil, reduce heat and simmer for 20 minutes. Beat egg with the 1 cup milk and add to rice mixture. Continue to boil another 3-5 minutes. Remove from heat and add 1 teaspoon vanilla. When cooled to warm, add a little cinnamon and nutmeg, if desired. May be eaten warm or chilled.
