SOUTHERN YAM BREAD 
1 1/2 c. sugar
1/2 c. oil
1/3 c. water
2 eggs
1/4 cup drained & chopped canned yams
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1/2 tsp. salt
1 tsp. baking soda
1 tsp. grated lemon rind (fresh or dried)
1 3/4 c. flour
1/2 c. chopped nuts

Combine in order and bake in greased and floured loaf pan at 350°F for 1 hour or until done.

GLAZE:

1 tbsp. butter
1/2 c. confectioner's sugar
1 tsp. grated lemon rind
1 tsp. lemon juice
1 tbsp. milk

Top bread with glaze and let cool in the pan 10 minutes before removing.
